Dewazakura Sake Brewery
The ginjo pioneers, brewing a sake purely to become umeshu.
Dewazakura, the Tendo brewery founded in 1892 that pioneered ginjo sake for everyday drinkers, brews a dedicated junmai sake purely for steeping plums. Three styles — tart-dry, ripe and pulpy nigori — each took silver at the 2024 National Umeshu Awards, and the Torokeru Yamagata line bottles local peach and grape on a ginjo base.
