Daishichi Sake Brewery
Kimoto umeshu — Kishu Nanko plums in Daishichi's junmai kimoto genshu.
Daishichi, founded in 1752 in Nihonmatsu, has kept to traditional kimoto brewing for over 250 years. Its Kimoto Umeshu steeps Kishu Nanko plums in undiluted junmai kimoto sake and holds a gold medal from the Féminalise wine competition; a long-aged Gokujo Umeshu completes the pair.
