Eiko Shuzo of Matsuyama, a brewery with gold medals from the Annual Japan Sake Awards, steeps Ehime-grown Nanko plums in honkaku (single-distilled) shochu with no acidifiers, colourings or flavourings — a crisp umeshu with restrained sweetness. The house also makes mikan liqueurs from Ehime citrus.
