Nanbu Bijin, founded in 1902 in Ninohe, is known for its sugar-free umeshu: all-koji junmai sake and Iwate-grown plums alone, letting the rice's umami and the fruit's aroma carry the drink at 9–10% ABV. The brewery holds kosher certification. A mountain-grape blend widens the range.
